Bread is considered sacred in Azerbaijan. Wasted bread isnâ€™t thrown away, as itâ€™s considered too important to be discarded. People even say that theyâ€™ll occasionally kiss bread they find on the ground, and place it on a higher surface, off the ground and away from the dirt.
When bread goes stale, Azerbaijani cooks donâ€™t just chuck it in the bin: they hang it up in bags, separate from the rest of the rubbish, to signify their respect. If you drop bread on the floor, itâ€™s custom to kiss it, as an apology.
